Almost everybody loves chicken, and there are probably a million or more ways to prepare it. However, Matt Horn, a successful restaurateur focuses on Southern dishes in his excellent cookbook, Kowbird: Amazing Chicken Recipes from Chef Matt Horn's Restaurant and Home Kitchen. This cookbook is awesome! It includes dozens of recipes that are irresistible.

It starts out with types of chicken and general information about the birds. Then it includes a bunch of main chicken dishes, all of which are mouthwatering (actually there isn’t one that I won’t put on my “must make soon” list). It is followed by southern sides that aren’t particularly innovative, but very southern and perfect accompaniments to the chicken dishes. Southern desserts are next followed by sauces, gravies, and spices used in southern cooking.

The recipes are written in the traditional manner with the ingredients listed first, followed by step by step instructions that are easy to follow. Almost every recipe includes a beautiful, professional photograph which makes it impossible to resist. Horn makes comments at the top of each recipe, which make them even more enticing. His writing style is great and the book is fun to read.

There aren’t so many recipes to be overwhelming, but enough to keep chicken fans cooking for weeks. Anyone looking at this excellent cookbook will for a queue of fabulous foods that they want to cook. This one is highly recommended.
